    I’m thinking I’ll make some pancit bihon (Filipino rice noodle dish). Its leftovers are my favorite for breakfast.

      Oh delicious. I used to work at a big park in western Canada and every Sunday the Filipino community would gather for lunch. Always so friendly they would come find me and invite me in for food. So many good cooks. I learned to make so many delicious things from that wonderful group of people.

      I haven’t considered pancit for breakfast but I thank you for the idea. That does sound good.

      I live in a city with a large Filipino community, and it rocks because nearly every restaurant (doesn’t matter it’s Italian, Mexican, chicken joint, or sports pub) will have lumpia on the menu. That right there is KittenBiscuit crack.

        Lumpia is also great. We’ve got a little Filipino grocery store around the corner here which I like to grab it from occasionally.

        I think pancit is better reheated. Heat it up in a pan with a little bit of peanut oil. I also add a little more soy sauce and garlic than is standard. Mmmmm, going to be so happy tomorrow morning.

        Edit: I was indeed very happy this morning.

    Salted and boiled cod with boiled potatoes and steamed broccoli. Topped with warm butter. Somehow my kids love it, despite being extremely picky eaters.

    My cats are currently nagging while waiting for their turn.

    My honey flies in tonight and we leave in the morning for a long weekend trip. Probably having takeout (maybe pizza?) while we do laundry and pack.

    I had boiled Pumpkin which I didn’t eat yesterday and IKEA noodles in shape of elks with canned tuna which the children didn’t like.

    I’m not vegetarian, but that sounds delicious! How did you make it? I’m always looking for easy meal ideas, and I’ve come to decide that meatless meals are so much easier than meat meals.

      Not OP but I make a pretty similar dish. Brown your sausage (veggie or otherwise), saute some onions and garlic, throw in a can of fire roasted tomatoes and the beans, some broth and spices, cook it down to your desired consistency.

      I do it with chicken, vegan chorizo, cannelini beans and a good bit of smoked paprika for 15 minutes in the electric pressure cooker. Tasty and quick meal prep

          No problem! I use a cup of broth per can of beans and you can switch up the bean types, proteins and spices to make some variety. You don’t even really need to brown the meats (or “meats”) first, it’s just a little tastier that way. If you skip it, you can be eating in like 30 min if that’s your desire.

    Made a chili with Guinness in it that I’m finally getting to sit down and enjoy. Totally worth it. :)
